VEGETARIAN STUFFED PEPPERS


Stuffed bell peppers were a childhood favorite. My mom made fabulous stuffed peppers, but she didn't make them often; probably because they are somewhat labor intensive.  

I've been looking for a healthier, vegetarian spin on stuffed peppers, using beans instead of ground beef. This recipe sounded promising, so I decided to give it a try for dinner tonight. It is definitely a winner!

These Mexican inspired stuffed peppers are made with red peppers instead of the typical green bell peppers, and the herbs and spices used...cilantro, cumin, and chili powder...are a departure from the usual Italian seasonings.

Great Timing! I just read that bell peppers are a very good food for kidney health. I love them, but don't do any red meat, so this is perfect! Thanks, Carol!
Thanks! I think you will love them! I made enough filling for four peppers, but only made two. Tonight I'm going to use the rest to make bean burritos...
